August 2, 1944 – February 19, 2024
Sandra Kay Eubank, 79, passed away Monday, February 19, 2024. Born in Maryland to parents, Samuel and Marion Mansfield Pfister, she had been a Hampton resident for many years.
Sandy was vibrant with an enthusiasm for life that never waned. Her boundless energy was infectious, and she valued her husband, children and other family above all else. She was the epitome of a matriarch and was the glue that held the family together. She planned and hosted events that ensured aunts, uncles, cousins, and grandchildren, all stayed in touch and knew each other. She was a positive influence that had a profound effect on those she cared about, friends as well as family.
An accomplished cook, Sandy and had a particular love of serving the southern dishes and seafood from her childhood on the Rappahannock river in Virginia's Northern Neck. She came from a family of Watermen and often said "we were so poor, all we had to eat were crabs and oysters"!
Travel was her passion, she loved seeing and experiencing new places and loved to talk about where she'd been and the adventures she was planning!
Sandy was a highly skilled drapery seamstress. She started her business "Cassandra's Drapery" in a spare room in her home until it grew large enough for she and her husband Bill to move into a commercial space, which incorporated her drapery workroom and retail fabric store. Her work was showcased for years in local Parade of Homes and Home-a-Rama events. Her clientele included celebrities, business moguls, inventors and even an astronaut! Her work has been featured in magazines such as Southern Living and Architectural Digest. She never stopped learning and enjoyed teaching and passing along her skills.
Her zest for life was a beacon to all who knew her; she will be sorely missed and never forgotten.
Preceded in death by her parents; she leaves to cherish her memory, husband, William S. Eubank; children, Terry Lee Popejoy and his wife Teresa Isgett Popejoy, and Emory Jackson Thomason, II; siblings, Dorothy Jane Smith, Benjamin Lee Pfister, and Tammy Renee Pfister; grandchildren, Terry Lee Popejoy, II , Emory Jackson Thomason, III, Logan Jack Thomason, Roxanne Teresa Bailey, and great-granddaughters, Gwendolyn Rose Bailey and Lillian Belle Bailey.
All services will be private. The family requests that any expressions of sympathy take the form of cancer research donations.
